When Mestral and Zefram Cochrane first met in 2053, Zefram asked if he was "Amish or something". The Vulcan replied, "Or something." Cochrane then said he didn't know much about the Amish. (ENT - Strange New Worlds 9 short story: "Mestral")

There were two Amish farms near George and Winona Kirk's farm in Iowa. Much of the work was performed by Amish tenants that they hired to work the fields, including a man and his four sons, who worked the fields with horse-drawn plows. When George considered quitting Starfleet to handle a delinquent James T. Kirk, Winona asked how it would help the boy to see his father wandering the property and bothering the Amish workers. (TOS novel: Best Destiny)

Deanna Troi joked with Beverly Crusher about abandoning her work commanding the skeleton crew aboard the Federation starship USS Enterprise-D, and entering the Amish life holoprogram to quilt during her down time. (TNG novelization: Descent)
