Borscht was a type of beet soup favored in Russia on Earth.

History and specifics[]

In the 2260s decade, Pavel Chekov served a variety of borscht at a banquet honoring Doctor Leonard McCoy that called for serving traditional Russian foods. Chekov called his version "Borzoi borscht" because it was prepared quickly, made with oil, onion, garlic, beets, beef broth, tomato juice, sugar, wine vinegar, sour cream, and dill. Nurse Christine Chapel made note of the recipe and collected it for a recipe book. (TOS reference: Official Cooking Manual)
