Carmor soup was a Iudka dish composed of an animal called the carmor. It was a purple soup with odd-shaped lumps.
In 2376, Neelix replicated the dish at the insistence of Captain Kathryn Janeway and served it to the Iudka representatives, Commander Kelmar and Second Commander Lel.
Apparently the main ingredient of the soup are the testicles of a carmor. Learning this tidbit of information, Janeway was hesitant at eat the dish but she found it wasn't half bad. (VOY novel: No Man's Land)
