In the 2260s, during shore leave on the planet Capory, Leonard McCoy asked for Denebian brandy at the Last Chance/First Chance tavern, but they didn't stock it. Hoping to find some at an establishment about a kilometer away, McCoy accepted an offer to walk there with one of the tavern's patrons, who then robbed and stabbed him.
In 2269, after departing from the planet Anomaly aboard the USS Enterprise, McCoy shared his last bottle of Denebian brandy with James T. Kirk and Spock. Spock thought the taste was interesting, though he was immune to its alcoholic affects. The three officers made a toast to Bill Hixon, who had been genetically altered on the planet and chose to stay behind as a half-Arivne.

Montgomery Scott kept a bottle of Denebian brandy in his quarters. In 2269, he brought the bottle to the ship's arboretum and sipped a glass while waiting helplessly for a nova bomb to destroy the Enterprise in nine hours. Tom Paris was familiar with Denebian brandy. In 2372, during a visit to Sardalia, he and Harry Kim sampled some demara, a purple-colored beverage with gold flecks in it. Paris thought it tasted like Denebian brandy. Kim thought it tasted like a sweet type of sake. (VOY novel: Bless the Beasts)
