Endive salad, also known as frisée salad, is a type of salad.

History and specifics[]

Benjamin Sisko liked Endive salad. It was used in Cajun and Creole dishes. (ST reference: Star Trek Cookbook)

On the advice of a botanist, Colonist Lilian Coates planted seedlings of tomatoes, endive, lettuce, peas, and green peppers after adding lime to compensate for Belle Terre's acidic soil. In 2280, she picked some of the endive, lettuce, and tomatoes for a salad to go with a pasta primavera meal she was cooking with James T. Kirk. (TOS - New Earth novel: The Flaming Arrow)

In 2319 at the Sur Le Mer Coucher restaurant on Helaspont Station, Admiral John Harriman and his wife Captain Amina Sasine reserved a specific table with a view of the Helaspont Nebula for their anniversary. During the dinner, John ate a frisée salad topped with a vinaigrette dressing made with white truffles. Sasine tried a piece of his endive. (TLE novel: One Constant Star)

In 2353, during her first week at Starfleet Academy, Cadet Kathryn Janeway was frustrated by a replicator that seemed unwilling to produce a salad to order. She cited ingredients such as endive, celery, radishes, and carrots.
