Gouge mining is an intensive type of mining undertaken by the Ferengi.

Gouge mining is considered the third worst job on Ferenginar after waste extraction and the worst which Quark was once unable to describe. Gouge mining is a dangerous, low-paying profession, with long working hours. Squeeb once watched a holodocumentary about his own gouge mining workers which inspired him to try to make their working conditions better. (DS9 novel: Legends of the Ferengi)

In 2369, Nava came to Grand Nagus Quark and told him he felt he had done all he could in the field of gouge mining. (DS9 episode: "The Nagus")
