Grapok sauce was a type of food condiment, a sauce formulated by the Klingon civilization.

Grapok sauce was often served with dishes such as gagh and racht. (ST - Seven Deadly Sins novella: The Unhappy Ones, DS9 episode: "Sons and Daughters", DS9 - The Dominion War novelization: Call to Arms...)

When fresh, it was a vivid burgundy, but faded to brown as it aged. It also went well with pasta and roasted LIngta'. (ST reference: The Star Trek Cookbook)

Grapok sauce was known for accentuating meaty flavors. However, it often ended up splattered throughout a mess hall in fine, nearly invisible drops. To prevent vermin from gathering in these areas, the drops had to be detected by a scanner and removed. Aboard the IKS Gorkon, that task fell to Leknerf. (GKN novel: A Good Day to Die)

By the late 24th century, it wasn't uncommon for Federation citizens to eat mixed-culture meals, such as putting grapok sauce on Andorian tubers that had been sliced and fried like french fries. (Adventures RPG module: Beta Quadrant Sourcebook)

During a meal with Kang and Kor aboard the IKS Voh'tahk in 2268, Koloth had a meal with the best grapok sauce he'd ever smelled. It came on a platter of gagh and racht. Kor dipped jInjoq bread in the sauce. (DS9 - Seven Deadly Sins short story: "The Unhappy Ones")

Aboard the IKS Rotarran in 2374, Ch'Targh offered Alexander Rozhenko bregit lung and grapok sauce, dumping a whole bottle of it onto his plate. He then ridiculed the first officer's Earth heritage by suggesting he next have ice cream and root beer. (DS9 episode: "Sons and Daughters")

In 2376, statue designer J'lang ate racht with grapok sauce on Narendra III before being taken over by Malkus. Later, Toq was dismissed from the bridge of the IKS Gorkon after a long duty shift, eating a meal with Rodek and Vralk. Rodek's meal included grapok sauce. One time, Toq lathered his racht with grapok sauce, then unintentionally sprayed it all over the table while making a point. Later, Vall could smell the sauce on him. (TNG novel: Diplomatic Implausibility)

In 2380, one day Jordan predicted the evening's meal for Worf, Geordi La Forge, and Miranda Kadohata at the Happy Bottom Riding Club on the USS Enterprise-E. He guessed correctly that Worf wanted taknar gizzards with grapok sauce and a glass of prune juice.
