Hasperat.
Hasperat was a well known, spicy Bajoran food. (TNG episode: "Preemptive Strike")
Specifics[]
It was a type of Bajoran rolled sandwich. Originally "hasperat" referred specifically to the brined vegetables used in its preparation, for which its taste relied on, but over time became the name for the whole sandwich. (ST reference: The Star Trek Cookbook)
It was considered Bajoran "fast food", served for lunch or as a snack, and was Ro Laren's favorite dish. Neelix noted that it was ordinarily prepared with heavy cream cheese, flour tortillas, and sliced bell peppers rolled together. He recommended using lighter cream cheese, adding cilantro and chopped watercress, and rolling it like a burrito. (ST reference: Star Trek Cookbook)
Families passed down personal recipes over generations that used plants such as moreka and spiny basil. Some recipes were complex, other simpler, though most Bajorans preferred them spicier. An approximation of the filling could be reproduced on Earth using kimchi, kimchi brine, cream cheese, bell peppers, various beans and vegetables, and flour tortilla shells. (ST reference: The Star Trek Cookbook)
History[]
At Deep Space 9, Quark's sold twenty-four varieties of hasperat. (DS9 novel: Avatar, Book One)
This was a common food available to the many pilgirms who traveled to see the Emissary's land after 2375. A Federation reporter described it as "fire in a pastry shell". (ST - New Worlds, New Civilizations short story: "A Walk in the Path of the Emissary")
In 3189, Adira Tal told Paul Stamets that they could make excellent hasperat and spoke seven languages, but wasn't sure if those talents came from the Trill symbiont Tal. (DSC episode: "Forget Me Not")
