Leola root was a dark yellow root vegetable which was native to the Delta Quadrant. Despite being known for its unpleasant taste, leola root was considered an excellent source of vitamins and minerals.

During a visit to gather food supplies on the planet Napinay in 2371, Neelix discovered a large supply of leola roots which he brought back to the USS Voyager with him, and would go on to use them in many different meals, including leola root stew.
