Mutation was a process by which the DNA of a lifeform was changed. Lifeforms affected by this process were known as mutants.

On Floe I, the native Floes developed a mutation serum to help them adapt to climate change. The mutation produced a turtle-like carapace to keep them warm. A secondary, unintended mutation was that their skin turned either bright red or pale blue. (TOS comic: "Ice Journey")

In 2370, some crewmembers of the Federation starship USS Fearless were mutated by an alien weapon on Patnira, including Captain Simon. (DS9 - The Brave and the Bold, Book One novella: The Second Artifact)

Rebekah Grabowski's mutation allowed her to access Unimatrix Zero. (TNG novel: Greater Than the Sum)

In the 20th century of an alternate reality, some mutated Humans formed an organization called the X-Men. (TOS comic: "Star TreX", TNG comic: "Second Contact", TNG novel: Planet X)
