Nurse Christine Chapel's mother made her "Sunday Super Pancakes" at least once a month. A type of lemon-cheese pancake, it was made with flour, baking powder, baking soda, salt, sugar, lemon rind and juice, eggs, buttermilk, and ricotta cheese, topped with butter and powdered sugar.
