Yamok sauce is a flavorful condiment of Cardassian origin which has gained widespread use on food in regions of space neighboring the Union. Its opposite, in taste and topping uses (such as ketchup to mustard on Earth), is kamoy syrup.
History and specifics[]
It was made from a Cardassia Prime herb that was also used for aging cheese. Cardassians commonly poured it atop sem'hal stew and tojal. It wasn't unknown in the Federation to see it used as a pretzel dip or spread on french fries. Its taste could be approximated on Earth using milk, lapsang souchong tea, butter, flour, Gouda cheese, red curry paste, and paprika. (ST reference: The Star Trek Cookbook)

Neelix crafted a version using teriyaki, soy sauce, and sesame seed salad dressing, and added it to chilled soba noodles on lettuce to make what he considered to be a Cardassian version of gagh. (ST reference: Star Trek Cookbook)
At one point, Frox sold someone a cruiser whose replicators apparently could only create yamok sauce. (Adventures RPG module: Alpha Quadrant Sourcebook)
Quark, on several occasions, stated that many species couldn't stand the taste of yamok sauce and became furious when his brother Rom neglected to cancel a large order of it following the Cardassians' departure from Deep Space 9 in 2369. (DS9 episode: "Progress")

In 2373, Quark predicted Cardassians might overtake the station and smuggled in large quantities of yamok sauce just in case. (DS9 episode: "Call to Arms")
Tojal with yamok sauce was one of Elim Garak's favorite breakfast dishes. Julian Bashir brought him the dish for lunch in 2375, made at the Klingon restaurant on Deep Space 9. (DS9 novel: A Stitch in Time)
In 2375, as they prepared to go into hiding from the Dominion on Cardassia Prime, Sakal Damar wanted to bring yamok sauce to season dried zabo stew on their long hike, and he thought the jerky tasted awful without it.
