By 2270, the Zachary Taylor operated with a crew of nine and was mostly automated.
In 2270, Klingons projected an illusion of the Zachary Taylor as the source of a priority-1 emergency call to deceive the USS Kobayashi Maru II. It worked, just long enough for a D7-class Klingon battlecruiser to appear in the freighter's place and fire at the Kobayashi Maru II, destroying it. (TOS comic: "The Final Voyage")
